If there is anything I love more than chocolate itself, it would have to be a double chocolate treat. And a double chocolate treat that can double as a healthy snack and a sweet treat… say what?! These paleo chocolate truffles are decadent, filled with healthy wholesome ingredients, and taste like dessert!
No snack is better to me than one that is FILLED with chocolatey goodness, and wholesome as heck. I am a habitual snacker. Someone who is on a literal snack schedule… every day at 10:30 AM and 3 PM, I go for a snack. It is like clockwork at this point. And more often than not, I crave something sweet! That’s just how I’ve been for as long as I can remember. I have a raging sweet tooth which pretty much always overpowers any possible craving for a savory, salty snack. And to me, that is totally okay, as long as I’ve got my stash of healthier sweet snacks on hand!
Enter these sweet paleo chocolate truffles. The inside is filled with just a few super simple ingredients like cashews, cocoa powder and vanilla extract. The outside is a 2 ingredient shell of dark chocolate and coconut oil, and they both come together to make a decadent, sweet, healthy snack. They are no-bake, and only require a blender or a food processor. Easier than ever and tasty as heck! Hope you enjoy. 🙂
- You do need either a food processor or high speed blender for this recipe in order to break down the cashews. We will be boiling them for a short period of time to soften them up, but you do still need a blender or food processor to fully break them down!
- If you do not care about making these paleo or vegan, you can just use whatever chocolate you have on hand, or your chocolate of choice, for the chocolate covering. Milk or dark chocolate are both delicious in these. 🙂
