Chocolate Covered Rice Krispie Treats

I feel like Rice Krispy treats used to be one of the best snacks as a kid and then I got older and they seemingly disappeared?! and for what?? They were (and still are) amazing! Even better, they are EASY, and honestly hard to screw up. They require minimal ingredients, and truthfully, you can fancy them up pretty much any way you like.

I mean, if Buddy from cake boss can make Rice Krispy treats into sculptures and call them cake, you can really do anything. They’re versatile, easy, and no-bake. What more could you ask for?!

These Rice Krispie treats are nostalgic, perfectly chewy and marshmallow-y, and spiced up with dark chocolate and rainbow sprinkles. I hope you love them as much as I do!

Chocolate Covered Rice Krispie Treats

Ingredients

  • 6 cups Mini Marshmallows

  • 2 1/2 Tbsp Unsalted Butter

  • 1 tsp Vanilla Extract

  • 4 cups Rice Crisps Cereal (use whatever brand is your fave! I used these)

  • 1 cup Chocolate Chips (I used dark chocolate, feel free to use milk chocolate if you prefer)

  • 1 tsp Coconut oil

  • 1/2 cup Rainbow Sprinkles

Directions

  • Begin by melting butter in a large stovetop pot over low heat.
  • Once the butter has fully melted, add all six cups of mini marshmallows to the pot and let those melt as well. This will take a few minutes and as they start to melt down, give them a light stir. Things will be sticky but trust the process.
  • As the marshmallows have melted down fully, turn off the heat to the stove and add vanilla extract to the pot of marshmallows and butter.
  • Then, add in rice cereal and stir until the cereal and marshmallow mixture is combined.
  • Next, line an 8×8 baking pan with parchment paper and add your rice krispie cereal to the pan. Wet your hands with water, shake off excess water, and press your krispie treats into the pan, forming an even layer.
  • Refrigerate your cereal treats for 20 – 30 minutes. After that, remove them from the fridge and cut them into squares.
  • Next, melt chocolate chips and coconut by microwaving in 30 second increments until the chocolate has fully melted.
  • Then, dip 1/2 of each rice krispie treat into the melted chocolate, and sprinkle your rainbow sprinkles over top.
  • Lay each treat on parchment paper to dry, then enjoy!
