If you’re anything like me, when you hear the words “Chunky Monkey”, your mind immediately goes to ice cream. Those delightful pints of Ben & Jerrys Chunky Monkey ice cream – I die for those.

But also, eating chunky monkey ice cream for breakfast isn’t necessarily a sustainable daily breakfast for me, ya know?? I mean, heck, gimme allll the chocolate and peanut butter and banana for every meal and I’d be a damn happy girl! But how about in a cozier, more comforting, single serve form? That’s something I can get behind.

Cheers to the newest kid on the block – warm, comforting, nostalgic Chunky Monkey Baked Oats… *cue all the heart eyes*

Ingredients

  • Ingredients:

  • 1/2 cup Rolled Oats (I used gluten free oats)

  • 1/2 mashed Banana

  • 1 tbsp Peanut Butter

  • 1 handful crushed Walnuts

  • 1 tsp Maple Syrup

  • 1/2 tsp Vanilla Extract

  • 1/2 tsp Baking Powder

  • 1/2 cup Almond Milk

  • Chocolate Chips

Directions

  • Preheat oven to 375 degrees Fahrenheit
  • In a mixing bowl, combine all ingredients and mix well until completely combined.
  • Add oats mixture to a ramekin or small, individual sized baking dish. I used a dish slightly larger than a ramekin – if using a ramekin, you may need 2. 🙂
  • Place baking dish or ramekin in the oven for 25 minutes. (If using a ramekin, you may be able to bake for less time)
  • After 25 minutes, increase the heat to 400 degrees Fahrenheit and bake for another 5-10 minutes until slightly golden on the top.
  • Remove from the oven and top with banana slices and a scoop of peanut butter – dig in!
