There are a lot of things I don’t have in the morning. Those things include, but are not limited to, time, energy, patience, and… did I mention patience? But if there is one thing I DO have in the morning, it’s an appetite. Seriously, I wake up hungry every single day. Not a morning goes by that I think to myself “eh I’m actually not hungry for breakfast today”. In fact, if I don’t have breakfast within an hour or two of waking up… all hell might as well break loose.

Which is why these Oatmeal cookie breakfast bars are an absolute savior. They take just 30 minutes combined to prepare AND bake. These bars are healthy, packed with oats, nuts, eggs, and fruit. And they have a hint of sweetness from the chocolate chips and maple syrup. Plus, it doesn’t stop there! These bars can be topped or paired any way you like. A few of my favorite ways to enjoy these oatmeal cookie breakfast bars are below, but the possibilities are endless!

  • Yogurt & fresh berries
  • Your choice of milk & favorite fruit
  • Warmed up with a scoop of your favorite nut butter

Another great thing about these bars is that you can store them in the fridge and take them as an easy grab & go option in the morning if you don’t have the time to sit down for a quick bite. I’ve even been enjoying these oatmeal cookie breakfast bars as a midday snack, because why stop at breakfast?!

How long will these last & how do I store them?

Store these bars for up to 4 days in the fridge for the easiest breakfast option!

What if I am allergic to nuts?

Feel free to sub in the walnuts in this recipe for another mix in! Your favorite seeds, fried cranberries, or even more oats would work as a perfect substitute.

What if I don’t like banana?

Applesauce would likely work as a substitute for the banana if you would rather sub out the banana.

    Healthier Chocolate Chip Oatmeal Cookie Breakfast Bars

    Ingredients

    • 1 & 3/4 Cup Rolled Oats

    • 1/2 Cup Walnuts

    • 2 Eggs

    • 1 Ripe Banana, mashed

    • 1/4 Cup Maple Syrup

    • 1 Tbsp Vanilla Extract

    • 1/4 tsp Baking Powder

    • 1/8 tsp Baking Soda

    • 1/2 Cup Chocolate Chips

    Directions

    • Begin by preheating the oven to 350 degrees. Line an 8×8 baking pan with parchment paper and set aside.
    • In a large mixing bowl, add oats, walnuts, eggs, mashed banana, maple syrup, vanilla, baking powder & baking soda.
    • Mix all ingredients until fully and well combined.
    • Next, add the chocolate chips into the mixture and mix once more.
    • Then, add the oat mixture to the lined 8×8 baking pan and flatten out into one even layer.
    • Bake for 25 minutes at 350 degrees. Once done baking, remove your oat bars from the oven and let them cool for about 30 minutes.
    • At this point, cut them into 9 squares and top with your favorite yogurt, milk, fruit or nut butter! Enjoy as an on the go-snack or a quick go-to breakfast.
