Peanut Butter Pumpkin Snack Bites with Oats and Chocolate

What do you get when you combine pumpkin, peanut butter, oats and chocolate? And a few other delicious ingredients? No…. not chocolate pumpkin spice oatmeal. You actually get “healthier” sweet fall snacks… more specifically, chocolate covered peanut butter pumpkin snack bites that are no bake and that you can enjoy all Fall long!

These snack bites are satisfying enough to be dessert, but made with a mix of nourishing ingredients like pumpkin, oats, and peanut butter to also be a snack option, too. The perfect options, right?!

I want to make these but I don’t like pumpkin…

Well then I have an option for you! And even better… it doesn’t require more ingredients! Simply sub in an additional 1/4 cup peanut butter in place of the 1/4 cup pumpkin for a pumpkin-free version.

What kind of oats should I use?

Rolled oats! Please do not use quick oats or steel cut oats… or really any other kind of oats in this recipe other than rolled oats.

I’m allergic to peanut butter – what now?!

Sub in another nut butter in place of the peanut butter! Just use a 1:1 ratio and you’ll be good to go.

I want to make these even healthier… how can I do that?

Simply omit the chocolate coating, OR add 1/4 cup of chocolate chips to the oat mixture instead of coating in chocolate. These are highly versatile and incredibly easy to customize the way you want.

How do I get my chocolate to melt smoothly for dipping?

It’s all in the kind of chocolate you choose! I recommend baking chocolate for the outside coating. Do not use chocolate chips to melt for the coating — they do not melt down smoothly and are actually engineered to keep their shape! Here are a few readily available baking chocolates that I recommend (you can find most of them at Target and/or large grocery stores):

Peanut Butter Pumpkin Snack Bites with Oats and Chocolate

Ingredients

  • 2 Cups Oat Flour

  • 1/2 Cup Natural Peanut Butter

  • 1/3 Cup Maple Syrup

  • 1/4 Cup Pumpkin Puree

  • 2 tsp Vanilla Extract

  • 1/4 tsp Sea Salt

  • 1 Cup Baking Chocolate, dark or milk will work!

Directions

  • Begin by adding oat flour, peanut butter, maple syrup, pumpkin puree, vanilla, and sea salt to a large mixing bowl.
  • Mix all ingredients together with a spatula until everything comes together into a thick oat mixture.
  • Then, with a cookie scoop, scoop the mixture into balls. Once scooped, roll the mixture in between your hands to smooth it out.
  • Next, place the balls on a small baking sheet or plate lined with parchment paper and refrigerate for about 1 hour.
  • Once the balls have refrigerated for one hour, you can melt the chocolate for dipping!
  • To melt the chocolate, place it in a microwave safe bowl and microwave in 30 second increments until fully melted.
  • Then, dip each ball in the melted chocolate and submerge with a fork to fully cover the ball in chocolate.
  • Finally, place the chocolate-dipped bites back onto the parchment lined dish and put them back in the fridge to let the chocolate harden. After about 60 minutes, the chocolate will have hardened and you can enjoy!

Notes

  • Store in refrigerator in an airtight container for up to 1 week
