Perfect Classic Coffee Cake

When is it acceptable to have cake for breakfast? Oh, well when it’s coffee cake, duh. Perhaps that was cheesy…. but maybe I’m not wrong, right?! Coffee cake is like a two for one, double trouble perhaps – it can double as both breakfast and dessert (and will be both once you try this recipe), what more could you ask for??

Coffee cake is so delicious in the simplest way. No crazy spices, no complicated baking methods, just pure enjoyable and therapeutic baking, with the most delicious smelling, and perfect tasting result! Not to mention, it’s best enjoyed with a cup of coffee, a latte, or your favorite coffee concoction, and there you have it – the most delicious and wonderful breakfast. My fave!

Perfect Classic Coffee Cake

Cake

Ingredients

  • Cake Ingredients
  • 3/4 cup Unsalted Butter, room temperature

  • 3 Eggs, room temperature

  • 1 cup Cane Sugar

  • 2 cups Cake Flour

  • 1 tsp Baking Powder

  • 1/4 tsp Baking Soda

  • 1/2 tsp Salt

  • 1/4 cup Milk or Almond Milk, room temperature

  • Cinnamon Swirl Ingredients
  • 2 Tbsp Cane Sugar

  • 2 Tbsp Brown Sugar

  • 1 tsp Cinnamon

  • Crumble Topping Ingredients
  • 1/2 cup + 2 Tbsp All Purpose Flour

  • 6 Tbsp Butter

  • 1/2 Tbsp Cinnamon

  • 6 Tbsp Brown Sugar

Directions

  • Preheat oven to 350 and grease a bundt pan with either cooking spray, butter or oil. Set bundt pan aside.
  • We’ll begin by preparing the cinnamon swirl and crumble topping so that once we have the cake batter prepared, we can assemble and bake! First, add the cane sugar, brown sugar, and cinnamon for the cinnamon swirl to a small bowl and toss to combine.
  • Next, cut the butter for the crumble topping into small cubes, about a half inch in size. Combine with the flour, cinnamon, and brown sugar for the crumble topping. Mix everything with your hands until “crumbles” form. Once these have formed, set aside.
  • Thirdly, we’ll prepare the cake part of the coffee cake! In a large mixing bowl, cream the butter with a hand mixer or stand mixer. Once creamed, add cane sugar and continue mixing until combined.
  • Then, add in all three eggs, one at a time, and continue beating with hand or stand mixer.
  • Next, add the milk or almond milk to that same bowl and mix in.
  • Finally, add baking soda, baking powder, salt and flour to the bowl with the wet ingredients and fold together to combine.
  • Then, get your greased bundt pan and add half of the cake batter to the bottom and smooth out to make even.
  • Sprinkle the cinnamon sugar mixture over the first half of the cake batter, and then add the rest of the cake batter over top, evenly around the bundt pan. Again, smooth out this second cake layer, carefully to keep the cinnamon sugar in place. 🙂
  • 10. Finally, sprinkle your prepared crumble topping over the second layer of cake batter and bake at 350 degrees for 45 minutes, or until a toothpick comes out clean.
  • 11. Let your cake cool, slice, and enjoy!
