Chocolate Pretzel Dipped Peanut Butter Cookies

Over the years, my love for peanut butter has only grown stronger. I currently have 5 jars of peanut butter open in my condo and I don’t plan on slowing down any time soon. I mean, if wanting to be buried in peanut butter is wrong, then I sure as heck don’t want to be right.

Every week in college, I would finish a jar a week. Some people thought it was a phase, but me? That’s when I KNEW it was real. Can confidently say, the momentum is still going!


I also LOVE the sweet + salty combo. It’s truly hard to say no to. Let’s recall some of the greatest sweet and salty combos and why they are so iconic.

  • Caramel popcorn
  • Maple bacon
  • Bacon wrapped dates
  • Salted caramel ice cream
  • Chocolate covered pretzels

Chocolate covered pretzels were the most iconic for me, so I had to create something to reminisce! But I also couldn’t forget about my beloved peanut butter addiction, so why not make the fluffiest chocolate covered pretzel peanut butter cookies?! We did the damn thing!

Chocolate Pretzel Dipped Peanut Butter Cookies

Ingredients

  • Cookie Ingredients
  • 1 egg

  • 1/2 cup All Purpose Flour

  • 1/2 cup Peanut Butter (use runny peanut butter)

  • 1/2 cup Coconut Sugar

  • 2 tbsp Softened Coconut Oil

  • 1/4 tsp Baking Soda

  • Chocolate Dip
  • 2/3 cup Chocolate Chips

  • 1 tsp Coconut Oil

  • Crushed pretzels

Directions

  • Preheat oven to 350 degrees Fahrenheit & line a baking sheet with parchment paper – set aside.
  • Whisk egg in a large mixing bowl.
  • Add coconut sugar, peanut butter, & coconut oil to the egg and mix well.
  • Add flour & baking soda to the wet ingredients and combine.
  • Form cookies into small balls and place onto parchment lined baking sheet. Press the cookie down slightly.
  • Bake for 9-10 minutes at 350. Remove cookies from the oven & let cool.
  • Over low heat on the stove, mix 2/3 c chocolate chips & 1 tsp coconut oil.
  • Once the cookies have fully cooled, dip half of each cookie in the melted chocolate. Let the excess chocolate drip off. Then dip the chocolate dipped half of each cookie into crushed pretzels immediately.
  • Let the dipped cookies cool for about an hour to let the chocolate harden on the cookie
  • 10. Enjoy!
