Easy M&M Cookie Skillet

If there’s one thing that reminds me of childhood, it’s a giant m&m cookie. I don’t just mean like some homemade m&m cookies (cause damn those are good), but I mean those biiiiig, size-of-your-face, cookies from the cookie stands in the mall that smelled delicious from a mile away, and that had m&m cookies for days on end.

They were heavenly, they were shareable (although I never share my cookies…), and most of all they were delicious down to the last damn crumb.

Which is why we leveled those up, put ’em in a skillet, and called it revolutionary. This cookie skillet uses Unreal Dark Chocolate Gems, although you can use the classic m&m’s, or any similar candy that you like! The chocolate gems get melty, the inside is slightly gooey, and its topped perfectly with a big scoop of vanilla ice cream. Does it get any more nostalgic?!

Ingredients

  • Wet Ingredients
  • 1/2 cup Vegan Butter, melted & cooled

  • 1/3 cup Maple Syrup

  • 1/3 cup Organic Cane Sugar

  • 1 tsp Vanilla Extract

  • Dry Ingredients
  • 1 1/4 cup Unbleached Bread Flour (I used King Arthur: 12.7% protein)

  • 1/4 tsp Salt

  • 1/4 tsp Baking Soda

  • 2/3 c Unreal Dark Chocolate Gems

Directions

  • Preheat oven to 340 degrees Fahrenheit & take out a mini cast iron skillet. Set aside. (note: A mini skillet yields a thick cookie skillet. If you want to use a standard 10 inch skillet, that will work too! Just adjust baking time down.)
  • Add all wet ingredients to a large mixing bowl and mix with hand mixer or stand mixer until ingredients are well combined.
  • 3. In a separate bowl, whisk together flour, salt and baking soda.
  • Add dry ingredients to the wet mixture, folding together until well combined. I like to add the dry mixture about 1/2 at a time.
  • Fold in chocolate gems
  • Spread cookie dough evenly into the skillet.
  • Bake for about 40 minutes and remove from oven to cool.
  • Top with your fave vanilla ice cream & enjoy!
