Easy White Chocolate Cranberry Granola Bars

As I was trying to how to perfectly describe these granola bars, all that kept coming to mind was how fun they were to make, and how much they unleashed the inner youthfulness in me! Something about the double chocolate, white and dark, drizzled over top, with fun mix-ins inside the bars made me feel both fancy and like a child again. In a good way. 🙂

Also they made me feel like I have my life together, because what other than snacks to make you feel organized, put together, and on top of your ish??

Easy White Chocolate Cranberry Granola Bars

Ingredients

  • 1 1/4 Cups Oat Flour (I always make my own oat flour by processing the oats in either a blender or food processor until a fine powder forms)

  • 1/3 Cup Cashew Butter

  • 2 Tbsp Coconut Oil, melted

  • 1 Tbsp Maple Syrup

  • 1/2 Cup Dried Cranberries

  • 1/2 Cup White Chocolate Chips

  • 1/4 Cup Dark Chocolate Chips

  • 2 tsp coconut oil (for melting the chocolate to drizzle over top)

Directions

  • To a large mixing bowl, add oat flour, cashew butter, coconut oil & maple syrup. Mix until all ingredients are well combined and thick.
  • Next, mix in dried cranberries & 1/4 cup white chocolate chips (the other 1/4 cup will be saved for drizzling over top) and incorporate well.
  • Take out a 9×11 pan out and line with parchment paper. Let the parchment paper hang over the sides of the pan so that we can easily remove the bars from the pan.
  • Press the granola bar mixture to the bottom of the pan in a flat layer and refrigerate for about 30-60 minutes.
  • While the granola bars are chilling, in the microwave melt the remaining 1/4 cup of white chocolate chips in a bowl with 1 tsp coconut oil.
  • In a separate microwave-safe bowl, melt 1/4 cup dark chocolate chips with 1 tsp coconut oil.
  • Once the granola bars have chilled, remove them from the refrigerator, slice into bars – whatever size you like – and first drizzle the melted white chocolate over top. Secondly, drizzle the dark chocolate over top and place back into the refrigerator to let the drizzle harden.
  • Enjoy as a snack or dessert & keep the bars stored in the fridge!
