One Bowl Almond Butter Blondies

If you know me at all (and you all do!), you know that peanut butter runs in my blood at this point. Not a single day goes by for me that I do’t have peanut butter, I’m a creature of habit, what can I say!?

I’ll have my peanut butter on fruit, yogurt, oats, toast, by the spoonful, you name it! Even in cookies and brownies! But sometimes peanut butter can be an overwhelming flavor, and overpower the other elements of a good cookie, or in this case, a blondie!

We used almond butter here to let the chocolate shine, to bring out the decadent flavor of the coconut sugar, and overall for a less dense blondie! Don’t get me wrong, peanut butter still has my heart, but these almond butter blondies are coming for the title. 😉

These blondies are super light, have a slight caramelization, a soft chocolatey center, and an absolutely addicting quality to them.

One Bowl Almond Butter Blondies

Ingredients

  • Wet Ingredients
  • 2 Eggs

  • 1/3 cup Almond Butter

  • 2/3 cup Coconut Sugar or Brown Sugar

  • 2 Tbsp Butter or Coconut Oil

  • 1/2 tsp Vanilla Extract

  • Dry Ingredients
  • 1/2 cup All Purpose Flour

  • 1/4 tsp Baking Soda

  • 1/4 tsp Salt

  • 1/3 cup Chocolate Chips

Directions

  • Preheat oven to 350 degrees Fahrenheit. Line an 8×8 baking pan with parchment paper & set aside.
  • In a large mixing bowl, whisk 2 eggs thoroughly.
  • Add almond butter, coconut sugar, butter & vanilla to the whisked eggs and mix together until fully combined.
  • Add flour (1/4 cup at a time), baking soda and salt to the wet ingredients and mix again until fully combined.
  • Next, fold the chocolate chips into the blondie batter.
  • Add the mixture to parchment-lined baking pan and bake for 20 minutes.
  • Remove from the oven after 20 minutes and let cool.
  • Slice & enjoy! Store in an airtight container.
