Simple Chocolate Covered Peanut Butter Patties

Anyone else think of the peanut butter patty girl scout cookies when they hear “peanut butter patties”. No? Me either. Not like they made up half of my childhood or anything…

Really though, finally giving a new meaning to the term “peanut butter patties” with these. They’ve got a simple base of a few pantry staple ingredients, they’re covered in chocolate, and they have some cute (and pesky — they spill everywhere, if you know you know) nonpareils on top.

Peanut butter and chocolate is my all time, timeless, forever lovable, perfect flavor combo, and these peanut butter patties are nothing short of highlighting all of those qualities. They’re a snack, they’re dessert, they’re anything you want them to be… and they’re DAMN DELICIOUS. Oh, and most importantly they’re no bake and can be made in one bowl. Yep, thats right!

Simple Chocolate Covered Peanut Butter Patties

Ingredients

  • 1/2 cup Peanut Butter (ingredients should be just peanuts or peanuts and salt!)

  • 1/2 cup Almond Flour

  • 2 Tbsp chocolate, melted

  • 1 Tbsp Maple Syrup

  • 1/2 tsp Vanilla Extract

  • 1 cup Chocolate Chips

  • 1 tsp Coconut Oil

  • Nonpareils / any sprinkles you have on hand

Directions

  • Add peanut butter, almond flour, melted chocolate, maple syrup and vanilla to a mixing bowl. Mix together until all ingredients are well combined — I always end up using my hands to mix as it gets thick.
  • Scoop mixture into about 2 inch balls and press into circular “patties” that are about 1/4 inch thick. Place onto parchment paper and refrigerate for 30-60 minutes.
  • During the last 5-10 minutes of refrigeration, melt the cup of chocolate and coconut oil and set aside to cool.
  • Next, carefully cover each peanut butter patty in the melted chocolate. Sprinkle nonpareils (or any sprinkles you have on hand) over top, and place back onto the parchment paper. Repeat with each peanut butter patty.
  • Place peanut butter patties back in the refrigerator to let the chocolate harden. Enjoy!
