My devotion to granola is unmatched. Scratch that, my FAMILY’S devotion to granola is unmatched. I buy a bag of granola and it’s gone in less than 48 hours. We eat it at breakfast, at lunch, for snacks, you name it. I mean, I make a double batch of granola and it’s gone in less than a day! I love that my family loves when I bake, but damn I’m trying to enjoy it for more than a day… guess I’ll triple the batch next time…

This granola is absolutely no exception to the devotion. In fact, it feeds the devotion. It’s been less than 12 hours since I’ve baked a batch of this brown butter coconut pecan granola, and it’s half gone. Looks like we’re on track to meet than 24 hour deadline of finishing the batch.

However, this just gives me another excuse to make a bigger batch of ‘nola, and to fill my kitchen with the smell of toasted coconut and pecans, and heavenly brown butter. If I could buy a candle that was the scent of this granola, you can absolutely bet I’d buy the whole store, but maybe that’s taking it a bit far. BUT, if my kitchen could smell like this granola 24/7, I’d absolutely make it happen – it’s just that good!!

Brown Butter Coconut Pecan Granola

Ingredients

  • 1 cup Rolled Oats

  • 1/2 cup Pecans

  • 1/2 cup Shredded Coconut

  • 3 Tablespoons Butter (regular butter or vegan butter)

  • 3 Tablespoons Maple Syrup

  • 1 1/2 teaspoons brown sugar (or coconut sugar)

  • 1 teaspoon Flaky Salt

Directions

  • Preheat oven to 315 degrees and line a pan with parchment paper or silpat mat and set aside.
  • Add oats, pecans, shredded coconut and flaky salt to a bowl and mix.
  • In a small pot, brown the butter by heating over low until butter begins to bubble and become fragrant and slightly darker in color. Remove from heat and stir brown sugar and maple syrup into the butter.
  • Pour butter mixture over the dry oats mixture and stir together until all dry ingredients are coated in the butter + sugar mixture.
  • Add granola to your pan and spread into a thin, even layer.
  • Bake for 30 minutes, until granola has browned slightly around the edges.
  • Remove granola from the oven and let it cool completely. Once cooled, break into chunks and store in an airtight container.

Notes

  • Enjoy this granola with smoothies, yogurt, chia pudding, or even on it’s own! Can’t wait to see your creations. 🙂
