Chunky Walnut Chocolate Chip Cookies

Let’s just cut to the chase here, I made three batches of these cookies last week and they were gone in THREE days. One batch a day for a family of four. If that doesn’t speak volumes… well then ya might just be kidding yourself.

These golden brown cookies have those beautiful crinkly tops, slightly crunchy outside, and fluffy, soft insides. My dad’s words after his first bite of a fresh, warm cookie was “damn, you could package these up and sell ’em!” – but I’ll do y’all a favor and share this recipe with you for free, of course!

Ingredients

  • Wet Ingredients
  • 1 Egg

  • 1/4 cup softened Coconut Oil

  • 2/3 cup Coconut Sugar (yes, include this with your wet ingredients!)

  • Dry Ingredients
  • 1 cup All Purpose Flour

  • 1/4 tsp Salt

  • 1/4 tsp Baking Soda

  • 1/4 tsp Baking Powder

  • Chopped Walnuts + Chocolate Chips – as many or as little as you’d like πŸ™‚

Directions

  • Preheat oven to 375 degrees Fahrenheit & line a baking sheet with parchment paper.
  • In one bowl, mix all wet ingredients.
  • In a separate bowl, mix all dry ingredients.
  • Add the dry ingredients to the wet mixture and mix until well combined.
  • Fold in chocolate chips and chopped walnuts. Omit walnuts if nut-free.
  • Form dough into balls and place onto the cookie sheet – press down slightly. Cookies will spread, so give them some room on the baking sheet. πŸ™‚
  • Bake cookies for 8 minutes and transfer to cooling rack. Do not over bake.
  • Enjoy!

Hope you enjoy this simple, chunky, delicious cookie recipe and can’t wait to see how yours turn out!

xx,

Lindsey
