I used to think that blondies were the things that were half cookie and half brownie. You know, those double layered, decadent bars? Apparently those are called brookie’s and my whole childhood is a lie. Well, not really, but you get the jist. Blondies, however, are just *blonde* brownies. Is my brain okay? Am I the only one who is just now learned this within the past few years?


Whatever… I know damn well what blondie’s are now, and honestly?? I’d trade a brookie for a blondie ANY DAY. Especially when they’re melt-in-your-mouth, soft, chocolatey AND dairy free. Talk about my kind of treat (and my whole family’s kind of treat, for that matter).

To be honest, this one took some work to get right. But the tahini? It absolutely makes this entire recipe. Tahini has this impeccable quality of being incredibly smooth and runny, and not super thick, which honestly just can’t be replicated by nut butters. And that’s what makes these babies so *melt in your mouth* quality. Idk if these are blondies, or cookie squares, but really, they’re just kind of the same thing in my book… and that is A-OK.

Now, shall we? Cause once you get a bite, watch that whole pan disappear like magic. Or watch it disappear as you hide ’em all for yourself (***guilty***).

Healthier Tahini Chocolate Chip Cookie Squares (DF)

Pan

Ingredients

  • Wet Ingredients
  • 1/4 cup runny Tahini

  • 1 teaspoon Vanilla Extract

  • 1/4 cup Maple Syrup

  • 1/4 cup Coconut Sugar

  • 1 Egg (can also sub flax egg here)

  • 1/4 cup softened coconut oil

  • Dry Ingredients
  • 3/4 cup All Purpose Flour

  • 1/4 teaspoon Baking Soda

  • 1/4 teaspoon Salt

  • 1/2 cup chocolate chips (**dairy free chocolate chips if necessary)

Directions

  • Preheat oven to 350 degrees Fahrenheit and line an 8×8 pan with parchment paper. If you do not have parchment paper, grease the pan well.
  • Add all wet ingredients to a bowl and mix well
  • In a separate bowl, mix flour, baking soda and salt.
  • Add dry ingredients to wet and mix well until mixture is smooth.
  • Fold in most of the chocolate chips, and save some for sprinkling on top right before putting in the oven.
  • Add mixture to the greased or lined 8×8 pan, and sprinkle remaining chocolate chips on top.
  • Bake blondies for 20-22 minutes, or until blondies start to very lightly brown around the edges and toothpick comes out clean.
  • Let cool, then slice & devour!
