Cinnamon Crunch Granola

Breakfast is my love language… there I said it. Specifically, breakfasts where I can load on granola. Or, ya know, just a giant bowl of granola by itself. I mean can ya blame me?! There are SO many ways to make granola and so so many possible flavor combos, the possibilities are truly endless!

One of my favorite things about this crunchy cinnamon granola is what happens when you eat it with a giant bowl of milk. Similar to Cinnamon Toast Crunch (which was the inspiration for this ‘nola!), the milk soaks up some of the cinnamon and boy oh boy is it tasty!

No promises made for this granola besides being absurdly easy, gloriously delicious and chunky, and full of cinnamon. With less than 10 ingredients, and almost all of them being pantry staples, this recipe is sure to be a winner in all regards!

Ingredients

  • 1 cup Oats

  • 2/3 cup Walnuts

  • 1 Tbsp Chia Seeds

  • 2 Tbsp Coconut Oil, melted

  • 2 1/2 Tbsp Maple Syrup

  • 1 Tbsp Cinnamon

  • 1 Tbsp Coconut Sugar or Brown Sugar

  • 1/2 tsp Sea Salt

Directions

  • Preheat oven to 315 degrees Fahrenheit and line a baking sheet with parchment paper or silpat mat.
  • Add oats, walnuts, chia seeds, cinnamon, sugar and sea salt to a large mixing bowl and toss together.
  • To that same bowl, add melted coconut oil and maple syrup. Mix all ingredients together until well incorporated.
  • Add granola to your lined baking sheet and spread it into one even layer. Making sure the granola is in an even layer is essential to ensuring you get chunks!
  • Bake for 35 minutes at 315 degrees. Once your granola is finished baking, remove it from the oven and let it cool completely.
  • Once cooled, break into chunks and enjoy!
