Decadent S’mores Blondie Bars

I just need to start off by saying that any time I eat s’more now, all I can think of is the line in The Sandlot where a kid asks Smalls if he wants a s’more, and his response is “s’more of what?”. Forever ingrained in my brain – now back to the regularly scheduled programming.

You know the good part of the s’more? Okay, the entire thing that’s good, but there are also parts of the s’more that really make it GREAT. The gooey inside of the marshmallow. The slight crunch of the burnt marshmallow. The warm drippy chocolate. THOSE are the parts I live for time and time again!

I also used to have a thing for putting some kind of extra lush & gooey addition in the middle of the graham cracker, marshmallow & chocolate to really just top everything off. And that, for me, was peanut butter. My friends thought I was weird until I made them try it… and let’s just say I’ll be expecting my thank you note in the mail any day now – 10 years later. 😉

These s’mores blondie bars truly have all my favorite next-level attributes of a s’more in them. Soft inside? Check. Melty chocolate? Check. Toasty marshmallows? Check. Anddd extra lush addition to tie it all together. Absolutely! However, this time, it isn’t peanut butter, no, it’s tahini! Truly a jack of all trades. Tahini can be sweet or savory, a topping or an ingredient – really anything! And in these bars, the tahini adds an element of gooey-ness, and really brings everything together.

Decadent S’mores Blondie Bars

Ingredients

  • Wet Ingredients
  • 2 Eggs, room temperature

  • 1/2 cup Unsalted Butter (melted & cooled)

  • 2/3 cup Coconut Sugar (can also sub for brown sugar here)

  • Dry Ingredients
  • 1 cup All Purpose Flour

  • 1/4 teaspoon Salt

  • 1/4 teaspoon Baking Soda

  • 1/4 teaspoon Baking Powder

  • 1/2 cup Chocolate Chips or chunks

  • 2 cups Mini Marshmallows

Directions

  • Grease an 8×8 baking dish preheat oven to 350 degrees Fahrenheit. (important! if you are using parchment paper, please remove the blondies from the parchment paper at step 8 – most parchment paper cannot withstand heat above 420 degrees Fahrenheit.)
  • Start by melting butter over low – medium heat over the stove. Once melted and still hot, pour into a large mixing bowl and add coconut sugar or brown sugar. Mix sugar in until they combine.
  • Once butter and sugar mixture has cooled, whisk two eggs.
  • In a separate bowl, mix flour, salt, baking powder and baking soda.
  • Add the dry ingredients into the wet mixture and fold together until smooth.
  • Next, add in 1/2 cup chocolate chips and 1 cup marshmallows and mix once more.
  • Spoon batter into your lined baking pan and bake for 20 minutes.
  • Remove blondies from the oven and turn the heat up to 500 degrees and add the remaining cup of marshmallows right over top of the blondies. Place blondies back in the oven for 1 – 2 minutes to let the marshmallows brown over top – watch closely for burning!
  • Remove from the oven, let cool for about 15 minutes, cut, and enjoy!
