Chocolate Covered Peanut Butter Crispies

Rice Krispy treats were a classic, obviously. The light crunch, the sweet sugary mixture, the chocolate drizzle on top…. whew. If you had those in your lunchbox as a kid, you were a hot commodity in the cafeteria!

The pre-packaged Rice Krispy treats were already amazing, but the homemade were even BETTER!

And for me, there are some combos that are just superior to others, and will always stand the test of time, those being:

  1. Peanut Butter & Jelly
  2. Peanut Butter & Banana
  3. Peanut Butter & Chocolate

Seeing a theme here? Yes, I sure do love my peanut butter!! And I love a classic. Thus, I bring you, a longstanding favorite combo mixed with an absolute classic childhood treat. Every time I make these, I store them in the fridge and pop ’em as a snack whenever I need one (always) – they are SERIOUSLY addicting. My dad can attest to that, too (hi dad, I know why these are disappearing so quickly!!)

So here they are – let’s party.

Chocolate Covered Peanut Butter Crispies

Ingredients

  • Peanut Butter Crispies Ingredients
  • 2/3 c Peanut Butter

  • 1 tbsp Maple Syrup

  • 1 tbsp + 2 tsp Coconut Oil

  • 2 cups of a crispy cereal (I Used One Degree Organics Brown Rice Cacao Crisps)

  • Chocolate Drizzle Ingredients
  • 2/3 cup Chocolate (I used Enjoy Life Dark Chocolate Chips)

  • 1 tbsp Coconut Oil

Directions

  • Melt peanut butter, maple syrup and coconut oil in a small pot over low heat and mix together thoroughly.
  • Once fully melted and mixed together, transfer mixture to a separate bowl and once cooled, add in 2 cups of your crispy cereal of choice, about 1/2 cup at a time.
  • Form the coated peanut butter cereal mixture into small balls (I did each about the size of a cookie scoop), and refrigerate on a large pan or plate.
  • As the balls are being refrigerated, melt chocolate and coconut oil together for the chocolate drizzle. I melt these in a pan over low heat, stirring continuously. Once fully melted, transfer to a bowl to cool.
  • Once the balls have been refrigerated for about an hour, drizzle the chocolate mixture over top.
  • Enjoy! Store in fridge or freezer in an airtight container or plastic bag.
