I truly cannot describe the struggle of finding your PERFECT chocolate chip cookie recipe that exceeds all of your expectations in terms of texture, chocolatey-ness, and ingredients. It’s a struggle.
But you want to know the even harder struggle? Finding a chocolate chip cookie recipe that your entire family likes, too. Now here’s the thing, they’re picky eaters! And for good reason. In this family, we love sweets, who doesn’t?! But I gotta say, the fam is damn hard to please sometimes! I mean who wants to bite into a chocolate chip cookie expecting decadence only to be let down by anything else? (not me, and not my fam, either.) So when three of my family members asked for seconds after they first tried these cookies, I knewww we had a winner on our hands.
I feel like there are SO many chocolate chip cookie recipes out there. Those ones that call for butter, sugar, flour, eggs, etc. You know, the run of the mill. But the market clearly isn’t oversaturated with cookie recipes, because every person has their own ideal texture, crumble, gooeyness, etc and everyone’s gotta claim their fave! I mean, can you blame?!
So here’s my absolute perfect chocolate chunk cookie. Undetectably vegan. Filled with chunks, shreds, and pieces of chocolate. Slight crunch on the exterior and soft inside. Melts in your mouth. And easily inhalable by the BATCH. Oh, and did I mention you can eat all the batter you want?! No salmonella, baby!!! Note: I try to eat plant based where possible, but I do still incorporate eggs into some of my baking (not in this recipe, though!) I really enjoy trying plant based options, both new and old to me. π
