Double Chocolate Peanut Butter Bites

Freezer snacks are heaven sent. You ever been so hungry that you ravage your refrigerator every 10 minutes just hoping that something new will pop up even though you haven’t been to the grocery store in 2 weeks? Yeah, hits a little too close to home…

But have you also ever ravaged your freezer at 10 PM looking for a snack and there are desserts stashed in the way back just WAITING to be eaten? Same. Quite literally the best feeling. Maybe even better than taking off your bra at the end of the day. If ya know, ya know.

I’ve been going hard on these decadent little bites this past week ever since I perfected them. 2-a-days over here with these snacks and absolutely no shame in my game. They fill me up during that ever-present midday slump, and also who doesn’t just crave a little chocolate in the middle of the work day? Same same same.

Double Chocolate Peanut Butter Bites

Ingredients

  • 1/2 cup Almond Flour

  • 2 tablespoons Cocoa Powder

  • 1.5 teaspoons Vanilla Extract

  • 3 tablespoons Maple Syrup

  • 1/2 cup Runny Peanut Butter

  • 2 scoops unflavored Collagen (optional – if omitting, add an additional 2 Tbsp almond flour)

  • 2 tablespoons ground Flax (optional)

Directions

  • Add all ingredients in a mixing bowl and mix until well combined.
  • Scoop into balls (I used a cookie scoop here), and place onto a baking sheet or plate. (should yield ~9 bites)
  • Refrigerate for about an hour.
  • Melt 3 Tablespoons of chocolate (dairy free to keep them vegan!) and a teaspoon of coconut oil for the topping. Drizzle over the tops of the bites once they are done chilling in the refrigerator.
  • Sprinkle with flaky salt! Enjoy. Store in the refrigerator.

    Hi! I made this recipe and loved it!! I substituted flax seed with ground up graham cracker, and added quite a bit of shredded coconut! I also added sprinkles for texture, and before putting them in the freezer I rolled them in (unsweetened) shredded coconut too. Absolutely delicious and superrrr simple- I would definitely make them again!
