Easy Fluffy Paleo Pancakes

One time I tried to find a new paleo pancake recipe. After a half hour of searching for a good one, I finally settled on a recipe that used pretty much just bananas, eggs and baking soda / baking powder. Never again…. they were flat, rubbery, and I had to drown them in toppings just to make them taste good. I’ll take my bananas and eggs separately from now on…. yikes.

But one time I decided to make my own paleo pancakes that are made up of some simple ingredients that don’t end up feeling rubbery & hard to swallow. 🙂 UP. GRADE.

I also still drown my pancakes in toppings, cause y’all know I love my damn toppings. But this time we’re using them to level up instead of using them to make the cakes bearable. Enhance these pancakes with all the toppings you crave, obviiiiously!

Ingredients

  • 1/2 cup Almond Flour

  • 1 Egg

  • 1 1/2 tbsp Coconut Sugar or Maple Syrup

  • 1 tsp Vanilla Extract

  • 1 tbsp Coconut Cream

  • 2 tbsp Almond Milk (you can use any plant based milk here!)

  • 1/8 tsp Baking Powder

  • 1/8 tsp Baking Soda

Directions

  • In a large bowl, mix together the egg, coconut sugar (or maple syrup if using), coconut cream, almond milk, coconut cream & vanilla extract.
  • Next, add in almond flour, baking soda and baking powder.
  • Once well combined, set the mixture aside. Heat a large pan over low heat and spray with cooking oil – I use coconut oil spray.
  • Scoop batter onto the pan to form pancakes and cover the pan with a lid – this helps the pancakes get fluffy!
  • Once you see small bubbles starting to form on the tops of the pancakes, you’ll know its time to flip them.
  • Once pancakes are done cooking, plate them up and top whatever toppings you love! I always love my pancakes with nut butter, maple syrup, homemade jam & all of the fresh fruit.
