Easy Mixed Berry Jam

Remember the days when you’d take a spoon and put peanut butter on half and jelly on the other half? Or better yet, those Smuckers Goober jars with the mixed peanut butter and jelly? Those were the days. The middle school days, that is.

But now I’m in my mid-twenties. And as much as it pains me to admit, Goober jars just aren’t really what I want to have in my cabinet when friends come over for dinner or a wine night. Although I’ll absolutely still get down with some $2 buck chuck if ya know what I mean.

You know what is more than acceptable, though? What some might even call it sophisticated and fancy… homemade jam! While making homemade jam might sound and look fancy, but all you need is a few core ingredients, 5 minutes, and a stomach ready to D E V O U R.

Ready? Let’s do it.

Servings

1

serving

Ingredients

  • 1/2 cup frozen berries (any berries will work – I love using mixed berries)

  • 2 tbsp chia seeds

  • 1/2 tbsp pure maple syrup (optional added sweetness)

  • 1 tsp vanilla extract (optional)

Directions

  • Heat a pan over medium heat.
  • Pour frozen berries into the pan and let them defrost.
  • Once the berries start defrosting and releasing some of their liquids, mash berries (a fork will work perfectly fine here).
  • Turn heat down to low in order to keep the berries from burning.
  • Once the berries are fully defrosted and mashed, add in your chia seeds and stir into the mashed berries.
  • Let the chia seeds absorb some of the liquid and thicken up – this should take about 1-2 minutes.
  • Add in maple syrup & vanilla, if using.
  • Mix one final time & enjoy!

Notes

  • Jam will keep for about 3 days sealed in an airtight container in the refrigerator.

This mixed berry jam is served perfectly in oats or yogurt, on toast or a pb&j sandwich – or even alone! Or, for more of a nostalgic time, grab your spoon, some of that homemade jam and a scoop of peanut butter. You know what to do. 😉

xx,

Lindsey

I live and die by breakfast food, coffee, peanut butter, and dessert. It's pretty much my blood type at this point.
