Why are the best recipes sometimes the simplest? Is it because it’s hard to screw them up? Because they’re less complicated, have less steps, and are therefore less complicated? Or maybe because they feel oddly nostalgic?

Something about these cookies just gives me all the feels. I, for one, LOVE sprinkles! They do in fact feel nostalgic, they’re playful, and I feel like they make any dessert taste better (even if they don’t have a super pronounced taste). My boyfriend, Chad, on the other hand… well, he really dislikes sprinkles. In his words, “they’re unnecessary”. Now while I absolutely disagree with him here, and think that sprinkles add a world of color (no pun intended) to any and everything, he did say that these cookies were great. And coming from a boy who hates sprinkles…. well I think that’s really something.

Ingredients

  • 1/2 cup Unsalted Butter, room temperature

  • 1/2 cup Cane Sugar

  • 1/4 cup Brown Sugar

  • 1/2 tsp Vanilla Extract

  • 1 Egg, room temperature

  • 1 cup All Purpose Flour

  • 1/4 tsp Baking Soda

  • 1/4 tsp Baking Powder

  • 1/4 tsp Salt

  • 1/2 cup Rainbow Sprinkles

Directions

  • Begin by lining a baking sheet with parchment paper or a silpat mat.
  • In a large mixing bowl, add room temperature butter and mix with a hand mixer or electric stand mixer for 3-4 minutes until light and airy.
  • To the butter, add cane sugar and brown sugar, and mix again with hand mixer or stand mixer to incorporate.
  • Then, add your room temperature egg and mix once more until butter, sugar, and eggs are smooth.
  • Next, add flour, baking soda, baking powder and salt to the bowl with the wet ingredients and fold in until all ingredients are combined and cookie dough comes together.
  • Finally, add about half the sprinkles to the batter and mix them in. Refrigerate the dough for about 30 – 60 minutes.
  • Once ready to bake, remove the cookie dough from the fridge and let it come to room temperature. Preheat the oven to 350 degrees Fahrenheit.
  • Scoop the cookie dough into balls and roll each ball in the remaining half of the sprinkles.
  • Once rolled in sprinkles, place the cookie dough balls on a cookie sheet a few inches apart and bake for 11 minutes.
  • 10. Let the cookies cool after baking and enjoy! Store in an airtight container at room temperature.
