Caramelized Pear Breakfast Parfaits

Lately, I haven’t been able to get enough of parfaits. I mean, breakfast or lunch, sometimes twice a day, multiple days a week. Something about the customization aspect of parfaits is so so satisfying. You can make them to feel cool and refreshing, maybe some fresh berries and tropical fruit. You can also make them feel dessert-y, with some dark chocolate and raspberries. Or you can make them feel warm and cozy like this parfait, featuring caramelized Anjou pears, cinnamon, and crunchy wintery-spiced granola.

Yogurt is one of those things, to me, that feels like a blank slate (kind of like toast!). The topping possibilities and combos are endless, and they can cool me off or warm me up on any given day.

The week that I made these parfaits, we had gotten about 10 inches of snow and damn was it cold! But, no way was I giving up my yogurt parfait obsession. No, the obsession was in full swing with no end in sight…. So, I “winter-ized” my parfait! I threw together some caramelized pears with fresh Anjou pears from my friends over at Superfresh Growers!

Anjou pears are so amazing for cooking and baking, and for both sweet and savory creations! They are slightly sweet, and are available all the way through the winter months, which makes them so perfect for winter recipes, like pear crisps, salads, and of course caramelized pear yogurt parfaits. 🙂

Caramelized Pear Breakfast Parfaits

Ingredients

  • 1 Anjou Pear (you can find them here)

  • 1 Tbsp Unsalted Butter

  • 1 Tbsp Brown Sugar (coconut sugar also works)

  • 1/2 tsp Cinnamon

  • 1 cup of your favorite yogurt (vanilla or plain yogurt are best in this recipe!)

  • 1/4 cup of granola (I recommend this easy granola recipe 🙂

Directions

  • Begin by cutting your pear into small pieces, roughly 1/2 inch in size.
  • Next, take out a small stovetop pan and heat over low – medium heat. Add your tablespoon of butter and let that melt for about 30-60 seconds.
  • Once the butter has melted, add cinnamon and brown sugar to the pan with the butter and just give everything a quick mix with a spatula.
  • Add your pears to the pan and let them cook for 3 minutes. At this point, the butter and sugar mixture may get a little thicker – totally normal!
  • After the first few minutes, turn the pears with the spatula and let them cook for another 3 minutes.
  • Continue lightly moving the pears around in the pan for another minute or so, as they start to caramelize.
  • Remove pears from the stove and add them over top of your yogurt and granola. Enjoy!
