KIND Bar Inspired Granola

In full transparency, I did not intend on making a granola recipe when this one came to light. It was a happy accident. Or, moreover a tasty accident.

The original plan was to make KIND bars at home. Cause why not? And also I’m unashamedly obsessed with making my own granola bars and snacks, and everything in between. Well, the original plot of this recipe went awry. I used far too few wet ingredients, and made the mistake of not using honey, which would have held everything together.

So, as you could expect, these bars did not hold together and instead I was left with essentially an unbaked granola. AH! The idea. Why not bake it and see if anything good comes out of it? Alas, something fantastic came out of it. Andddd, this recipe will be on my monthly granola rotation for the foreseeable future. All thanks to a failed (but eventually successful) recipe.

Ingredients

  • 3/4 Cup Rolled Oats

  • 1/2 Cup Almonds

  • 1/2 Cup Peanuts

  • 1/2 Cup Crispy rice cereal (any brand will work!)

  • 1/2 tsp Sea Salt

  • 1/2 tsp Vanilla Extract

  • 3 Tbsp Maple Syrup

  • 2 Tbsp Refined Coconut Oil – melted

  • 2 Tbsp Dark Chocolate

Directions

  • Preheat oven to 315 degrees Fahrenheit and line a large baking sheet with parchment paper or a silpat baking mat. Set aside.
  • In a large mixing bowl, add oats, almonds, peanuts, rice cereal, sea salt, vanilla, maple syrup & coconut oil. Mix thoroughly until well combined and all ingredients are incorporated.
  • Next, melt both tablespoons of dark chocolate in the microwave in 30 second increments until fully melted. Drizzle over top of the granola and mix one last time.
  • Finally, add granola to the lined pan and press down into one flat even layer (this is important in order to get chunks of granola!)
  • Place your granola into the oven and bake for 28 – 30 minutes. Once finished baking, remove from the oven and let it cool completely before breaking into it. Cooling your granola completely will ensure you get chunks of granola when you break it!
  • Once fully cooled, lightly break your granola into chunks and store in an airtight container for about a week.
