Triple Layer Cookie Fudge Bars

I’m a sucker for anything in bar form. Something about the thickness, and the big chunk of dessert. ALL for it. I’m also a sucker for chocolate chip cookies. My boyfriend, Chad, calls himself a chocolate chip cookie connoisseur, and it has definitely rubbed off on me. Always searching for the next best cookie, and rating them as we go. Funny enough, one of his tried and true chocolate cookies is from the Whole Foods bakery section. I mean, what can ya say? Whole Foods really never disappoints! Almost every time we go to Whole Foods, a 6 pack of the Brown Butter Chocolate Chip Cookies end up in our cart… not saying who puts them there… but also not saying who DOESN’T.

But when I received the new Soozy’s chocolate chip cookies in the mail… I knew I had to do something with ’em… throw them in a bar, obviously!

We didn’t just make a bar, though… we made a TRIPLE LAYER bar. Double the cookies, double the fun – that’s how the saying goes, right?

With cookies on the bottom and on the top, and a thick layer of chocolate peanut butter chocolate in the middle, it’s pretty much unfathomable not to sink your teeth in at first bite. Oh, and did I mention 2 layers of cookies? Think I did, but can’t hurt to mention it again. πŸ˜‰

Triple Layer Cookie Fudge Bars

Ingredients

  • Layer 1 (bottom)
  • 1 cup Almond Flour

  • 1/4 cup Maple Syrup

  • 1 tbsp Coconut Oil

  • 1/2 tsp Vanilla Extract

  • Chocolate Chips

  • Layer 2 (middle)
  • 2/3 cup Peanut Butter

  • 1/4 cup Almond Flour

  • 3 tsp Cocoa Powder

  • 1 tbsp Maple Syrup

  • Layer 3 (top)
  • 3-4 Soozy’s Chocolate Chip Cookies – crumbled!

Directions

  • Preheat oven to 350 and line either a 6 or 8 inch baking pan with parchment paper. (note: you need parchment paper here in order to get the final product out of the pan)
  • Begin by making the bottom cookie layer. Mix all of layer 1 ingredients together in a bowl and press into the bottom of the parchment lined pan. Bake for 12-13 minutes.
  • Remove the bottom cookie layer from the oven and set aside. Let cool for at least 30 minutes.
  • Next, mix all of layer 2 ingredients in a bowl until well combined. Spread evenly across the cooled cookie layer (all of this should be done in the baking pan).
  • Finally, crumble Soozy’s chocolate chip cookies onto the top of the second layer and press lightly into the second layer.
  • Place the baking pan with all 3 layers into the freezer for at least an hour, or overnight.
  • When ready to eat, remove the bars from the pan by way of the parchment paper, and cut into desired size!
