Coconut Almond Butter Granola Bars

Why do all of my favorite granola bars seem to cost me an arm & a leg? Don’t get me wrong, I LOVE to stock up and they’re just so easy to grab & go, but sometimes I just need to save a little money here & there for other thing besides snacks. Although snacks rank pretty damn high as a priority.

Coconut also ranks really high on my list, but I always seem to forget about it. I legit will ghost coconut for months at a time, and then when I remember it, I use it at any chance possible. I just like to save it for those special moments I guess….

And these bars were one hell of a special moment. Chad & I finished the whole pan of granola bars in 24 hours. Either we have a serious snack addiction, or we just have an addiction to these. Spoiler alert — it’s both. 😉

Coconut Almond Butter Granola Bars

Ingredients

  • 1 cup Rolled Oats (I used GF oats)

  • 1/4 cup finely shredded Coconut

  • 1/3 cup finely chopped Walnuts

  • 1/2 cup runny Almond Butter

  • 1/4 cup Maple Syrup

  • 1 1/2 Tbsp melted Coconut Oil

  • 2 scoops unflavored Collagen (optional – omit to make these vegan. If omitting- add 1/4 cup extra oats)

  • Pinch of Salt

Directions

  • Mix all ingredients in a large bowl and press into the bottom of a parchment lined baking pan (8×8) or loaf pan (using a loaf pan will yield thicker bars).
  • Refrigerate for one hour and then drizzle with dark chocolate if desired + sprinkle with sea salt.
  • Slice into bars & enjoy!
