Cherry Chocolate Granola Bars

It is truly no secret that I have a deep rooted love for homemade granola bars. Ever since I stopped buying store bought bars, and started making them at home, a few great things have happened. One, I’ve saved SO much money. Some of my favorite snack bars range from $3 – $5 at the grocery store. When I buy those bars for five day work weeks every week, that money adds up! Thats around 20 dollars every week just for snack bars that I could make at home… a little crazy if you ask me!

Second, I’ve become a bit more eco friendly! The great thing about homemade granola bars is that there is no waste with the single use packaging. And I’ll be the first to admit it, I am no hero when it comes to reducing single use plastic, I try my best where I can! And this is just one way that is easy and feels good to me!

Now here’s the thing, I still LOVE store bought granola bars. Those things are good and there is just no denying it. But I just would rather choose not spend that money every single week on bars, and just buy them as a treat to myself here and there every couple of weeks.

Healthy homemade no bake chocolate cherry granola bars!

With that, I love coming up with new flavor combos for granola bars and chocolate cherry has been on my list for quite some time. I’ve seen chocolate cherry everywhere from ice cream to cupcakes, so why not granola bars?! Let me tell ya, the combo works immensely well in bars, too! These bars are sweet and salty, thick, filling, and made with wholesome ingredients. Grab the recipe below!

Cherry Chocolate Granola Bars

Bar Ingredients

  • 1 Cup Oat Flour

  • 1/3 Cup Dried Cherries

  • 3 Tbsp Chocolate Chips

  • 2 Tbsp Shredded Coconut

  • 1/2 Cup Cashew Butter

  • 1/4 Cup Maple Syrup

  • 1/4 tsp Flaky Salt

  • CHOCOLATE DRIZZLE TOPPING INGREDIENTS
  • 2 Tbsp Chocolate Chips

  • 1/2 tsp Coconut Oil

Directions

  • Begin by adding oat flour, dried cherries, chocolate chips (only the 3 Tbsp for the bars), shredded coconut, cashew butter, maple syrup and flaky salt (only 1/4 tsp for the bars) to a large mixing bowl.
  • Mix with a spoon or spatula until all ingredients come together in a thick but combined mixture.
  • Line an 8×8 pan with parchment paper – this will help us pull the bars out of the pan after they’ve chilled.
  • Add the granola bar mixture into the pan and press down into a flat even layer. For ideal thickness, I spread out the granola bars to about 3/4 of the pan, yielding slightly thicker bars.
  • Once you’ve spread your bars in the pan to your desired thickness, place them in the refrigerator for about 30 minutes. While the bars are chilling, melt the chocolate and coconut oil for the chocolate drizzle topping.
  • Once the bars have chilled, cut them into 8 bars and then drizzle the chocolate over top.
  • Enjoy! Store in the fridge for an easy homemade snack.
