Blueberry Chocolate Chip Granola Bars (nut-free)

The only thing stopping me from continuing to make more granola bars at home is… well… when I already have a stash of too many in the fridge. So basically, I don’t go longer than a week without making a batch of homemade granola bars. They’re just that easy, quick and delicious!

These bars are nut-free, but packed with flavor. So whether you or your kid has a nut allergy, or you just like to switch things up, they’re perfect for anyone! I see SO many homemade (and store-bought) granola bars that usually have nuts in them somewhere, whether that be chopped nuts, or a nut butter. With that, it can be so difficult to find a nut-free bar that actually tastes good and is good for you – but that’s where these come in! I am so addicted to them, and I hope you enjoy them, too!

Blueberry Chocolate Chip Granola Bars (nut-free)

Granola bar Ingredients

  • 1 Cup Oat Flour

  • 1/4 Cup Dried Blueberries

  • 3 Tbsp Chocolate Chips

  • 2 Tbsp Shredded Coconut

  • 1/2 Cup Sunflower Butter

  • 1/4 Cup Maple Syrup

  • 1/4 tsp Flaky Salt

  • Chocolate Drizzle Topping (Optional)
  • 2 Tbsp Chocolate Chips

  • 1/2 tsp Melted Coconut Oil

  • 1/2 tsp Flaky Salt

Directions

  • Begin by adding oat flour, blueberries, chocolate chips (only the 3 Tbsp for the bars), shredded coconut, sunflower butter, maple syrup and flaky salt (only 1/4 tsp for the bars) to a large mixing bowl.
  • Mix with a spoon or spatula until all ingredients come together in a thick but combined mixture.
  • Line an 8×8 pan with parchment paper – this will help us pull the bars out of the pan after they’ve chilled.
  • Add the granola bar mixture into the pan and press down into a flat even layer. For ideal thickness, I spread out the granola bars to about 3/4 of the pan, yielding slightly thicker bars.
  • Once you’ve spread your bars in the pan to your desired thickness, place them in the refrigerator for about 30 minutes. While the bars are chilling, melt the chocolate and coconut oil for the chocolate drizzle topping.
  • Once the bars have chilled, cut them into 6 (or more) bars and then drizzle the chocolate over top. Sprinkle with remaining flaky salt
  • Enjoy! Store in the fridge for an easy homemade snack. 🙂

    Can I incorporate protein powder into these?

      Yes! Just swap in however much protein powder you’d like in place of equal parts oat flour.
