Coconut Almond Butter Snack Bites

As a girl who doesn’t go more than three hours MAX without a snack, I cannot possibly fathom how any person lives without a fridge or freezer stash of snacks. If you do, more power to ya! But I am just not that person — snacks galore over here.

You know those memes that are like “if I keep going back to my empty fridge, eventually more food will pop up, right?” That could not possibly be more me to a T if and when I run out of snacks.

I feel like I talk about freezer stashes a ton, but they could not come in more clutch than when you’re ravenous for snacks. And damn do these coconut almond butter bites come in clutch. I made a batch and ate the whole thing myself in less than a week… what can I say, working from home has ya girl hungry.

Coconut Almond Butter Snack Bites

Ingredients

  • 3/4 cup Oat Flour or Almond Flour

  • 1/4 cup runny Almond Butter

  • 1 & 1/2 Tbsp Melted Coconut Oil

  • 2 Tbsp Maple Syrup

  • 1 scoop unflavored collagen (omit for vegan option)

  • 3 Tbsp Coconut Shreds

  • 1 Tbsp Chia Seeds

  • 1/4 Cup Chocolate Chips or Chunks

Directions

  • Combine all ingredients, except for the chocolate chips, together in a mixing bowl and mix until well combined.
  • Roll into ~2 inch balls & refrigerate for about 30 minutes.
  • While the snack bites are chilling, melt chocolate chips in the microwave in 30 second increments until fully melted. Drizzle chocolate over snack bites and enjoy!
  • Store in the refrigerator for a delicious snack!
