Healthier No Bake Cookie Dough Bites

Sometimes the craving for cookies hits so hard, like, to the point where you don’t even have the patience to wait 10 minutes to make the dough, 30 minutes for it to chill, and then another 10 minutes for them to bake. Oh, and the added time to let the cookies cool. Not to mention, the time it also takes to contemplate whether or not it’s worth eating the raw dough and possibly risking salmonella. I mean, I eat the raw dough every time anyways, but that risk still always lingers in the back of my mind.

Truth be told, this is how this recipe came to life. The craving for chocolate chip cookies was so real, but I’d already been in the kitchen all morning recipe testing and I was HANGRY. If you know, you know…. hanger hits so damn hard.

Luckily, I threw these cookie dough bites together in about 5 minutes, let them chill for 20 minutes, and there we had it – cookie dough in a pinch. And right up there with the real thing. 😉

Healthier Raw Cookie Dough Bites

Ingredients

  • 3/4 cup Finely ground Almond Flour or Oat Flour

  • 1/2 cup Almond Butter

  • 1 Tbsp Vanilla Extract

  • 2 Tbsp Maple Syrup

  • 1 scoop Collagen or Unflavored Protein – optional

  • 2/3 cup Chocolate Chips

  • 1 Tsp Coconut Oil

Directions

  • In a mixing bowl, add almond flour, almond butter, vanilla extract, maple syrup and collagen or protein. Mix until all ingredients are fully combined.
  • Add 1/2 cup of the chocolate chips to the mixture and fold in. Save the remaining 1/3 cup chocolate chips for dipping the cookie dough bites in later on.
  • Scoop dough and form into balls, then refrigerate for 30 – 60 minutes.
  • Meanwhile, melt the remaining 1/3 cup chocolate chips and 1 teaspoon coconut oil in the microwave. Heat in 30 second increments, until fully melted and mix together.
  • Once the cookie dough balls have chilled, remove them from the refrigerator either dip them into the chocolate mixture, or drizzle the melted chocolate over top. Place back into the fridge to harden and enjoy!
