At this point it’s no secret that I’m obsessed with making snacks at home. I used to browse the snack aisle of the grocery store every week. And for no less than 20 minutes, at that. While I do still browse the snack section, I usually walk out with way fewer snacks cause I’ve got a running stash at home. I’m no less obsessed with snacks today, and every day, but now it’s more of an obsession with homemade.

The best thing about making snacks at home is that they are easy, budget friendly, AND taste amazing. Plus, who said I can’t browse the snack aisles of the grocery store still? But now it’s more so for inspiration, instead of just draining my wallet – ha!

These chocolate cashew snack bites are soft, packed with flavor and made up of simple ingredients. They come together in just a few quick and easy steps, they’re perfect for grab and go, and are comprised of simple pantry staples. This way, you’ll save a few bucks, and maybe even save you you another trip to the grocery store!

You can make these on the weekend for the week ahead, or during the week to power you through to Friday. Whenever you prepare them, they’re bound to be a hit! Store them in the fridge and grab for a quick bite whenever you need a pick-me-up.

Chocolate Cashew Snack Bites

Ingredients

  • 1 Cup Oat Flour or Almond Flour

  • 1/2 Cup Peanut Butter

  • 1 Scoop Collagen or Protein Powder of Choice (14 grams in weight – most scoops are different sizes!)

  • 1/4 Cup Cashews – chopped

  • 1 Tbsp Cocoa Powder

  • 2 Tbsp Maple Syrup

  • 1/4 Tsp Sea Salt

  • 2 Tbsp Chocolate Chips

  • 1/2 tsp Coconut Oil

Directions

  • Begin by adding oat or almond flour, peanut butter, protein powder, cashews, cocoa powder, maple syrup and sea salt to a large mixing bowl.
  • Mix until a dough for the snack bites forms.
  • Line a baking sheet or plate with parchment paper and scoop the snack bites onto the parchment paper – will make about 11 bites. Place in the refrigerator for about 25 minutes.
  • While the snack bites are chilling, microwave chocolate chips and coconut oil until melted. Drizzle over the snack bites and enjoy!
  • Store your snack bites in the fridge and enjoy for a simple snack.

    How many grams of protein powder? I used 30 grams, which is about 3/4 scoop and the dough was so dry it’d barely stick together, even after adding extra peanut butter. I used drippy peanut butter too.

      Hey Stephanie! I would half that amount to about 14 – 15 grams of whichever protein powder of choice and the dough should stick together much easier. If you’ve already added 30g, you can add a bit more maple syrup which will help. I should have clarified in grams rather than scoops as all scoops are different sizes. 🙂
