Nutty Almond Cashew Granola

The only thing I love more than a giant handful of chunky crunchy nutty granola is… well… two handfuls of chunky crunchy granola. And it better be nutty almond cashew granola, at that. It comes together in just 30 minutes, is filled with two kinds of nuts, nourishing rolled oats and hemp seeds, and naturally sweetened with maple syrup. Store bought granola is good, but once you go homemade… you rarely go back.

I constantly top any and every single granola breakfast I can with granola. It’s just the easiest and tastiest addition, no?! Plus, the best added bonus is the immense amount of money I save by making my own granola versus buying it. And shoot I mean I think I can bake it quicker than I can run out to the store a buy a bag. Win-win.

This granola is one for the books! It’s so chunky and not one of those granolas that just ends up crumbling into oats the second you touch it. It’s got STRUCTURE, and baby, we love to see it!

Homemade Nutty Granola Recipe Notes:

  1. Brown. Your. Butter. It adds a boatload of flavor and is the backbone of this recipe!
  2. Let your granola cool completely after you bake it! Seriously. By letting the granola cool, you’re letting it form its gorgeous delicious chunks.
  3. While I used this whole batch of granola as a topping for smoothies and yogurt bowls, you can absolutely enjoy this granola just in a bowl of your favorite milk! It’s just as perfect on its own. 🙂

Ingredients

  • 1.5 Cup Rolled Oats

  • 1/3 Cup Cashews

  • 1/4 Cup Sliced Almonds

  • 1 Tbsp Hemp Seeds (optional)

  • 1 Tbsp Brown Sugar

  • 1/4 Cup Brown Butter

  • 1/4 Cup Maple Syrup

  • 1.5 tsp Vanilla Extract

  • 1 tsp Sea Salt

Directions

  • Preheat oven to 315 degrees and line a pan with parchment paper or silpat mat and set aside.
  • Add oats, almonds, cashews, hemp seeds, and flaky salt to a bowl and mix.
  • In a small pot, brown the butter by heating over low until butter begins to bubble and become fragrant and slightly darker in color. Remove from heat and stir brown sugar and maple syrup into the butter.
  • Pour butter mixture and vanilla extract over the dry oats mixture and stir together until all dry ingredients are coated in the butter + sugar mixture.
  • Add granola to your pan and spread into a thin, even layer.
  • Bake for 30 minutes, until granola has browned slightly around the edges.
  • Remove granola from the oven and let it cool completely. Once cooled, break into chunks and store in an airtight container.
